I've been checking at the new release schedules, and I'm surprised by how few Greatest Hits albums are currently scheduled between now and Christmas. October and November are the traditional months for big Best Of releases.
From the current release schedule, here's my prediction of the best sellers by the end of the year:-
1. Madonna ** 2. Will Young 3. Katherine Jenkins 4. Foo Fighters 5. Queen ** 6. Turin Brakes 7. Mark Morrison 8. Aqua 9. NERD 10. Chris Rea ** 11. Sinitta 12. Alison Moyet **
For the artists marked with **, there are already multiple Greatest Hits albums available.
The YTD best selling Greatest Hits so far are:- 1. Michael Jackson (Essential) 2. Annie Lennox 3. Bette Midler 4. Michael Jackson (Number Ones) 5. Abba 6. Girls Aloud
Annie Lennox's is the only 2009 release on the list. Jim Reeves (died 1964) and George Harrison (died 2001) are probably the second and third best selling 2009 Greatest Hits albums so far.

I seriously think that the Foo Fighters will sell in around the same ball park as Stereophonics did last year.

I think the only two that will sell lots are Madonna and Will Young.
EDIT. I see Queen's is Absolute Greatest, a career-spanning 20 track GH so that will do well. Nice to have the biggest hits on one CD.

To be honest I'm a little bemused by the Queen one. The platinum collection has been cheap enough in some sales and it's not like they're going to be putting any huge new tracks on there or popular recent ones is it?

People start to get forget when they get to the age of Chris Rea's fans. This is what we used to called Daniel O'Donnell syndrome at HMV, where you'd expect a drop off in sales the second week, but no! Fans flock to either buy their first copy because it's their first chance to get out of the house/home(!) or they forgot they bought it last week!

As I said, at present they're spread over 3 albums. Isn't it better to have the biggest of those hits on ONE CD?

That's like saying why watch two series of a classic show like "Fawlty Towers" when I could just edit the best jokes (and by best I mean MY favourites with no input from you or anyone else) into a half hour clip show. That way you don't have to change the disc. Or maybe edit all the most exciting parts out of "Lord of the Rings" or the Harry Potter books into a handy pamphlet. That way you don't have to put one book down and read another!
