I think this is one song that was better than the original
Voice Of The Beehive - I Think I Love You

Definitely prefer the VOTB version to the original, although I confess I'm not sure who sang the original version.
This may be controversial but I (currently) prefer Florence & The Machine's "You Got The Love" to the Candi Staton version. I got so tired of hearing the Candi Staton version in clubs in the 90s, I never wanted to hear it again. Although FATM is now quite over-exposed and I'm not a fan of her other stuff, it's still quite a radical departure imo.

The original of I Think I Love Yuo was The Partridge Family, which featured David Cassidy.

This topic has been done many times.
Joe Cocker - With A Little Help From My Friends I don't know about "better" than the Beatles but certainly different and a classic interpretation. I would probably classify this as my favourite cover version of all time but don't know if I can say it is better than the original.
Dave Stewart & Barbara Gaskin - It's My Party They went on to try doing this with other songs too. This particular Dave Stewart had already charted high with a cover of "What Becomes Of The Broken Hearted" (also a great cover version, certainly way better than Robson & Jerome's lame version) with Colin Blunstone (The Zombies) on vocals. On the subject of the Zombies, by the way, Santana did a fairly good cover of "She's Not There". Not sure it's good enough to make this list. The original of this song by Lesley Gore was just too "ordinary".
Happy Mondays - Step On A definitive moment of Madchester, this was a cover version of John Kongos's "He's Gonna Step On You Again".
Ken Boothe - Everything I Own Also covered by Boy George similar to Ken Boothe's version but by then a reggae-version was no longer "original". Originally by Bread (David Gates).
There are many songs where the well-known version is not the original and many people don't even know the original. For example everyone knows that the Fugees version of "Killing Me Softly With His Song" is a cover version but so is Roberta Flack's version, the original was done by Lori Lieberman. Tainted Love isn't originally a Soft Cell song, the original was by Gloria Jones. And the original of Without You was by Badfinger, not Nilsson. Everybody's Talking was Nilsson's originally though...

the most obvious one is Jeff Buckley's version of Leonard Cohen's Hallelujah
I hate it when TV shows like American Idol get their facts wrong, like the other day when some guy covered Kate Bush's This Woman's Work and they said it was a Maxwell cover (who did a cover in the early 00s that became quite a hit in the US)

Hurt by Johnny Cash is a superb cover of the Nine Inch Nails song. Many think it's the best cover ever.

Those Dave Stewart covers were very good - and definitely far better than the original in the case of It's My Party - and I much prefer Santana's She's Not There to the Zombies original.

I've just thought of another one, can't believe I overlooked this
Don't Stop Believin' - The version by the Glee Cast is so much better than the original by Journey, which sounds a bit 'dreary' in comparison.
I can't say this of every Glee song, but this is the obvious one that springs to mind!

I love 'The Boss' by Diana Ross, but prefer the cover by The Braxtons - their voices make Diana sound weedy by comparison.

How about Jimi Hendrix - "All Along The Watchtower". Even Bob Dylan acknowledges this outstrips his original version !!

Mad World - Adam Lambert so much better than the original! the Gary Jules cover of the Tears for Fears original that Lambert photocopied is 100 times better, even the Alex Parks version is better
